On August 27, 2024 we were blessed with our first duck eggs from our first flock.

I have been looking forward to this day for quite a while and it came sooner than I expected! While we plan to let the girl’s egg laying skills mature a bit more before we eat them, I am day dreaming of delicious duck egg omelets and whipping up delicious desserts using the eggs.

For those not familiar, duck eggs taste very similar to chicken eggs and have a slightly creamier consistency, which French chefs and bakers love! Duck eggs do have more cholesterol than chicken eggs; however, it’s because the egg size is about one and a half the size of a chicken egg, so the egg to cholesterol ratio is the same.

I can’t wait to try the eggs in my next dish and eventually offer them for sale at our local farmers market, but I don’t want to count my eggs before they’ve hatched!
