This is an easy delicious recipe the whole family enjoys! Great for busy week nights or a quick recipe for the weekend.

Ingredients

  • 2 packages Gnocchi

  • 2 heads Broccoli

  • 1 Red Onion

  • 2 cups Cherry Tomatoes

  • 1 bulb Garlic

  • Olive Oil

  • Salt

  • Pepper

  • Bacon

Directions

  • Preheat oven to 400 degrees.
  • Chop one head of broccoli and one red onion into small pieces and set aside.
  • On a large sheet pan, cook bacon separately until desired crispiness.
  • Remove bacon from the sheet pan and dry access oil with a paper towel.
  • Keep the remaining bacon oil in the pan, add gnocchi, broccoli, onions, diced garlic, and whole cherry tomatoes. Move ingredients around to cover with the oil.
  • Add salt and pepper to taste.
  • Bake in the oven for 35 minutes or until desired vegetable crispiness.
  • Enjoy!

Notes

  • If you don’t want to use the remaining oil from the bacon, you can use a new sheet pan and drizzle olive oil or your oil of choice over the ingredients.
