Ingredients
2 packages Gnocchi
2 heads Broccoli
1 Red Onion
2 cups Cherry Tomatoes
1 bulb Garlic
Olive Oil
Salt
Pepper
Bacon
Directions
- Preheat oven to 400 degrees.
- Chop one head of broccoli and one red onion into small pieces and set aside.
- On a large sheet pan, cook bacon separately until desired crispiness.
- Remove bacon from the sheet pan and dry access oil with a paper towel.
- Keep the remaining bacon oil in the pan, add gnocchi, broccoli, onions, diced garlic, and whole cherry tomatoes. Move ingredients around to cover with the oil.
- Add salt and pepper to taste.
- Bake in the oven for 35 minutes or until desired vegetable crispiness.
- Enjoy!
Notes
- If you don’t want to use the remaining oil from the bacon, you can use a new sheet pan and drizzle olive oil or your oil of choice over the ingredients.
